The config tool runs fine, it starts without any issues. Changing the settings there didn't help though, the demo still crashes.

It works! So apparently the demo won't start, but the full game starts up just fine . Thanks for all the help!
EDIT: The game runs quite well, although Origin crashes frequently, causing ME3 to close. Origin really sucks

Awesome! Glad you took the risk and it worked!
I get the Origin crashes too, but found a trick
When Origin Crashes, just Alt+Tab back to PlayOnLinux and launch Origin again, then go back to Mass Effect 3 and continue playing

Settle down
As you can see Wine has it's "bugs" but games WILL work.
This is my experience with a lot of games I have tested. Setup PlayOnLinux, Wine and packages, install game, configure and play. Some crash, most run fine.
I'm thankful for Wine developers and PlayOnLinux developers. They are the reason I've stuck with Linux since I'm a huge gamer.

By the way, I found a quicker way to install Origin instead of killing the process.
I posted all of the new steps in this Medal Of Honor Guide
Basically, Origin isn't crashing after the installation, its waiting...
But you have to adjust the permissions for the Origin folder and delete the igoproxy.exe files and Origin will appear with a login screen.

For anyone interested, you can fix the crashing issue permanently by disabling cloud saving in Origin
