I was challenged with getting Office 2007 to run on a Mac Mini. Specifically Outlook 2007 because Thunderbird doesn't work well with the calendar and appoinments.
I took a few notes...
1. Install PlayOnMac
2. click install
3. click "non listed program"
Note: I initially used the Office 2007 script but it was missing a few critical components.
4. Install Office 2007 (mine was enterprise)
5. Do not select updates
6. Do not reboot
7. Create PlayOnLinux shortcuts for Excel, Word, PowerPoint, Outlook, etc
8. Reboot Windows with Wine: Configure/ Wine tab/ Windows Reboot
9. Install Components: Internet Explorer 8
Note: IE8 also installs msxml3, Service Pack 3 & msls
10. Reboot Windows with Wine again
Outlook configuration
1. launch outlook
2. Launch Outlook
3. Exchange, pop, smtp, imap
4. Check manual setup
5. Next
6. Internet E-mail
7. Next
8. Your Name:
9. E-mail Address:

Account Type: imap

Conclusion:
Outlook actually ran very fast and didn't need a copy of Windows to run it.
PlayOnMac worked perfectly as long as you had IE8, msxml3 & Service Pack 3 installed. Outlook saw our Exchange Server and credentials worked perfectly.
One thing I noticed is the email you create will not load into the default PST file unless it has the exact same name as the local profile you are logged in as in OSX.
Naturally Outlook just creates another PST file for your emails.
Also, the Calendar and Contacts did not automatically populate from the Exchange Server.
These will have to be populated manually.
